Introduction

A recipe I got off of AllRecipes that sounded good. Switched a few things out to make it less calories. I served it over a bed of sauted onions and bell peppers. it was really good! Number of Servings: 12

Ingredients

    6 Chicken thighs, fat and bone removed
    3/4 cup vinager
    3/4 cup water
    tsp sugar
    2 tbs soy sauce
    2 bay leaves
    tsp pepper
    1 onion, chopped
    salt to taste
    14 ounce can of LIGHT Coconut Milk
    3 cups of brown rice

Directions

Chop onions.
Put everything into the slow cooker, set on high for 5 hours.
When ready, chop up chicken, if desired.
When chicken is finished cooking, scoop out 3 cups of broth + 3 cups of water and put it in a rinsed pot with 3 cups of rice. Cook until done.
Serve 1/3 cup of adobo over 1/2 cup of finished rice.
Makes 12 servings.

    Sounds really good. Trying to use more chicken and fish (though I don't really like either one!!) and less red meat. Love Adobo, so I will definitely try this. - 3/26/10

    Such negativity! I got this recipe off of Allrecipes.com as I've never made adobo before.
    We eat more veggies/less meat in our daily diet, so this recipe was perfect. Chopped/shred the meat & it's quite enough and didn't seem like anything was missing.
    You could always add more, if you like.
