Ingredients

2 cups granulated sugar
1 cup oil
1/2 tsp salt
2 eggs
3 cups natural bran or bran cereal
1 cup boiling water
2 cups low fat buttermilk
3 cups whole wheat flour
2 1/2 tsp baking soda
Directions
Makes 30 medium size muffins
Beat first 3 ingredients. Add eggs and 2 cups of dry bran. Add buttermilk, flour and baking powder.
Add 1 cup bran soaked in 1 cup boiling water.
Put in covered container and refrigerate until ready to bake muffins. Will keep up to 1 month.
Bake at 350 for 12-15 minutes.
