Introduction

I wanted to find a way to add more wholegrains to our diet so I thought I'd try to make the breaded coating using wholegrain bread with the spices. I wanted to find a way to add more wholegrains to our diet so I thought I'd try to make the breaded coating using wholegrain bread with the spices.

Ingredients

    4 salmon fillets (High Liner wild Pacific)
    2 slices wholegrain bread
    1/2 tsp each: ground ginger and parsley
    1/8 tsp: cayenne pepper
    1/4 tsp: minced fresh garlic
    2 tbsp soy sauce

Directions

In food processor, mix bread (cut in cubes), ginger, parsley and cayenne. In a separate bowl mix minced garlic with the soy sauce.
Dip salmon fillets into soy mixture, then coat in bread crumb mixture.
Bake at 425 deg F for 15-20 minutes or until done.
