Introduction

This is a recipe that I was given several years ago. The original recipe has raisins too, but I leave them out because I use this bread for toast as well as sandwich bread. One slice with 2oz of turkey and a slice of provalone is a filling lunch with an apple and some pretzels. If you have a way to slice it thinner, you could make a full sandwich. Ingredients

    2 pkgs. Active dry yeast (I use quick rising)
    1/2 C Warm water
    1 C Oatmeal
    2 tsp Salt
    2 Tbls Oil (I use safflower)
    2 3/4 C Boiling water
    1 C Bran
    3/4 C Molasses
    1 C Wheat flour
    6-7 C white flour

Directions

Mix yeast with 1/2C warm water and set aside. Heat 2.75C of water to almost boiling and combine with oats, bran, sugar, salt, and oil and cool to lukewarm. Add molasses, yeast mixture, whole wheat flour, and 2C white flour. Mix until combined. Knead several times and place in oil coated bowl (turn over once in bowl so it doesn't stick.) If using instant yeast, let rise 30 minutes...1 hour for regular yeast. Punch down and let rest. Divide in half and place in greased bread pans. Let rise another 30 minutes. Bake at 350 for 50 minutes. Each loaf makes 16 1/2inch slices.
