Tasty taco filling in a flaky crust. Tasty taco filling in a flaky crust.
Number of Servings: 4

Ingredients

1 9-inch Refrigerated Pie Crust (I use Pillsbury brand)
    1/2 Pound Lean Ground Turkey
    1 C Finely Diced Onions
1/2 C Black Beans, canned, exclude juice and rinse to reduce sodium
    2 tsp Ground Cumin
    2 tsp Chili Powder
    2 tsp Fresh Grated Garlic
    Cooking Spray

Directions

Brown the ground turkey in a skillet coated lightly with cooking spray; stir well to prevent burning. When the turkey is browned, add the onions and cook on medium heat until tender. Add the black beans and remaining spices and mix until aromatic.
Cut the pie crust into 4 equal pieces. Place the cooled meat mixture in the center of each piece and fold over to close. Use a fork to press the edges to together. Poke a few holes in the top of each meat pie to allow moist air to escape while baking.
Place the meat pies on a baking sheet and bake for 15-20 minutes at 375 degrees or until golden brown.
Serve with salsa and a fresh salad.
