Ingredients

    7 oz (uncooked) whole grain pasta
    1 bell pepper
    1 small onion
    1 c chopped red cabbage
    1 can corn

    dressing:
    2 cloves garlic
    2 T oil (I like olive or avocado)
    6 T vinegar (I use some balsamic and some cider)
    2 T mustard (I like dijon)
    1/2 t salt
    1 t pepper
    1T sugar

Directions

Cook pasta to al dente. Combine with veggies. Combine dressing ingredients and pour over.
Use additional or different veggies to mix it up. Add other spices to taste.
Even better after a day or two in the fridge!
