* Lamb & Mint Sausage, 215 grams (3 sausages)
* Celery, cooked, 4 stalks
* Onions, raw, 2 medium (2-1/2" diam., sliced into slivers)
* Yellow Bell Pepper, 1 pepper chopped coarsely
* Green Bell Peppers, 1 pepper, chopped coarsely
* Extra Virgin Olive Oil, 2 tbsp
* salt to taste
Directions
PREPARATION - - - - - - -
- chop celery, into about 3/4-1 inch cross-sections
- seed and coarsely chop peppers (about 10 strips cut in half cross-wise)
- peel and slice onions lengthwise into coarse sliver (about 1/2 inch wide)
- slice sausage into rounds (1/2-3/4 inch)
COOKING - - - - - - - -
- Place saucepan over medium high heat.
- Once pan is hot add olive oil and sausage, stirring to coat sausage thoroughly with oil.
- Lightly brown sausage, stirring/tossing to sear exposed surfaces.
- Add celery and onions to pan, turning to coat with oil.
- Add salt (I use about 1 tsp).
- Cover pan with lid and allow to sautee for about 5 minutes.
- Turn ingredients, reduce heat to medium low, and cover, allowing to simmer for about 10 minutes, stirring once or twice during the process.
- Add peppers to saucepan, stir thoroughly and cover.
- Simmer for 6-8 more minutes.
Makes 2 servings.
NOTE: this CAN be served with pasta (preferably something like a medium to large ziti or penne) or tofu shiritake (preferably angel hair), but I prefer it with an artisan bread (I'm using a white flour, rosemary loaf for dinner tonight); this can also be seasoned additionally with garlic, or, if other sausage is used, any number of spices and herbs - however, for the lamb and mint, I prefer to keep the embellishments to a minimum.
