Introduction

Ingredients

    1/2 box Barilla Plus Multigrain Farfalle Pasta
    10 tsp grated parmesan cheese
    27 kalamata olives
    1 jar Trader Joe's marinated artichokes
    2 tsp sea salt
    2 tbsp dried parsley
    3 tsp dried basil
    1/2 tsp freshly ground black or multi-colored pepper

Directions

Add farfalle pasta to boiling water. Cook until al dente. Drain pasta then immediately pour drained pasta into ice cold water to stop the cooking process. Let pasta cool in ice bath for 15 minutes.

While pasta is cooling, pour jar of marinated artichokes including the marinade into a bowl. Use a scissors to cut the artichokes into more bitesize pieces. Pit kalamata olives if necessary. Add pitted kalamata olives to artichokes and marinade. Drain chilled pasta and add to mixture. Stir. Add parmesan cheese, sea salt, pepper, parsley, and basil. Continue to stir until pasta is evenly coated.

This recipe serves 5 people in a 2-cup serving size.
