Ingredients
-
2 cup Whole Wheat Pastry Flour
1/2 tsp Salt
1 T. Baking Powder
1 cup *Splenda for baking
2 large (8" to 8-7/8" long) Banana, fresh
2/3 cup *Applesauce, MUSSELMAN'S Lite
1/2 cup Fat Free Soy Milk, Vanilla,1 cup
Directions
Makes 16 squares.
Heat oven to 350F. Spray a 8" x 8" baking pan with butter Pam. Place very ripe bananas, applesauce, and soymilk in blender and puree until mixed well. In a large bowl, mix up the WW pastry flour (if you can't find WW pastry flour, add 3 t. Vital Wheat Gluten to the dry ingredients), salt, baking powder and splenda for baking.
Pour the wet and dry ingredients together until the dry is just covered. If you don't think there's enough moisture, add applesauce by the 1/3 cup until it looks like muffin dough.
Place in oven and cook for 30 minutes. After that, check for solidity in the center; if a toothpick comes out clean, it's done; if not, lower the temp to 300F and cook in 10 min increments until toothpick comes out clean.
Allow to cool and serve.
