Introduction

A wonderful recipe. It gets better the longer it sits. I use a combination of red, green and yellow peppers, about 1/3 of each and the salad just pops with color. Ingredients

    1.5 cups Black beans, drained and rinsed (1 can)
    2 cups canned corn, drained
    Bell Peppers, combination of red, green and yellow is best, use 1/3 each
    3 green onions, sliced
    2 Tbs. chopped Cilantro
    2 small Serrano peppers, finely chopped
    1 Tbs. olive oil
    2 Tbs. Red wine vinegar
    1.5 tsp. lemon juice
    .25 tsp kosher salt
    .12 tsp, red pepper flakes
    .5 tsp ground coriander
    .5 tsp. cumin

    Serves 5, per serving: 162 calories,, 3.9 gms fat, 26.8 gms carbs, 6.7 gm protein

Directions

Seed and finely dice the Serrano pepper. Use protection for your hands and keep hands away from eyes. Dice the peppers. Combine with beans and corn. Whisk dressing in a bowl. Stir dressing into salad ingredients and refrigerate to blend flavors, stirring occasionally. Make ahead several days for the flavors to meld. Total recipe serves 5.
