Introduction

Ingredients

10 cage free brown eggs
1 cup Trader Joe's lite cheese blend
2 Trader Joe's jalapeno chicken sausages, diced
1 green bell pepper, diced
1 tsp cajun seasoning
1/4 tsp black pepper
Directions
Preheat oven to 375. Use nonstick cooking spray or olive oil to grease a 8x8 glass baking dish. Layer sausage, peppers, and cheese in the bottom of the dish. In a separate bowl, use a fork or whisk to combine egg yolks and whites with the cajun seasoning and pepper. Be sure all yolks are combined. Pour eggs over layers in baking dish and use fork to stir, ensuring ingredients are equally mixed. Bake in oven for 25-30 minutes, or until lightly browned on top. Allow to cool slightly before cutting. May be stored in refrigerator in separate containers for easy reheating.
Makes 6 servings.
