Introduction
A great and filling dish that is high in protein, low in fat, super easy and quick to prepare and reheats beautifully. My husband's favorite when I serve its with my "Jenn's Chicken Fried Rice" for an at home, healthy Chinese meal. Ingredients

2 boneless skinless chicken breasts, seasoned and grilled - cut into strips or bite size cubes
1 bag VIP Mandarin Stir Fry
1 bag PICTSWEET All Natural Sliced Yellow Squash
1 can La Choy Sliced Water Chestnuts
1 c. sliced fresh mushrooms (optional but included in calorie count - we love mushrooms!)
1/4 c. low sodium soy sauce
Crushed Red Pepper to taste
Directions
Trim fat and season chicken breasts. Grill and then cut into cubes or strips.
Spray your largest pan or wok with cooking spray and heat on medium. Pour in all the veggies and cover (you don't need any oil or butter, the veggies make enough naturally!). Allow to cook, stirring occasionally, for 5 minutes. Add in cubed chicken and soy sauce. Stir well, cover and turn to med/low for 5 minutes. Add in crushed red pepper to taste. Cook uncovered last 5 minutes and serve hot. Enjoy!
