Ingredients

12 large Eggs
2 Cups white vinegar
1 medium onion, sliced, separated into rings
2 Tablespoons sugar substitute like Splenda
1 1/2 teaspoons pickling spice
1 teaspoon salt
Directions
Hard boil eggs by placing in large pot with enough water to cover eggs by 1". Bring water to boil over high heat. Turn off heat, cover pan, and let stand for 18 minutes. Run cold water into pan until all water is cool. Refrigerate eggs until cool.
Peel the eggs, place loosely in a large pickling jar and set aside.
In a large saucepan, combine vinegar, onion, sugar substitute, pickling spice and salt. Bring to a boil over hight heat. Reduce heat to low and simmer for 5 minutes. Pour the hot mixture over the eggs, then seal with an airtight lid. Refrigerate the eggs until serving.
