Introduction

Ingredients

1 package active dry yeast
2 cups warm water
4 cups flour
2 tsp salt
1 tsp sugar
2 tsp olive oil
corn meal (for dusting)
Directions
Combine yeast, water, sugar, and salt in a bowl. Let it sit for 5 minutes for yeast to activate. Add flour and mix to combine.
Cover with a cloth and let the dough rise until it doubles in size (about an hour or so). Divide dough into two equally sized portions and *gently* form each into a ball. Place on a cookie sheet that has been dusted with cornmeal. Cover with a towel and let rise for another 45 minutes.
Heat oven to 425 degrees F. Cut 3 slits into the top of each ball of dough. Place in the center rack of your oven. Bake at 425 for 15 minutes. Lower to 375 and bake for another 10 minutes.
Remove from oven and serve warm, or slice and serve within the week.
Makes 18 servings (9 slices per loaf).
