Introduction

This is a recipe for crepes, the very thin French version of pancakes. The yogurt in the recipe acts as a thickening agent, cutting down the amount of flour needed. You can use any flavor of yogurt you want to change the taste of your crepes.

Crepes are great for many different types of meals. Fill with sugar free syrup with fruit or sugar free preserves for breakfast. Cheese and grilled veggies for lunch! Or add some low fat Cool Whip, sugar free chocolate syrup and your favorite fruit for a guilt-free dessert! I love experimenting with all the different things I can make with them. Ingredients

    1/4 cup liquid egg substitute (like egg beaters)
    1/2 cup Almond milk (or skim milk)
    1/2 cup water
    1/4 cup yogurt (any flavor)
    3/4 cup whole wheat flour

Directions

Combine egg substitute, milk, water and yogurt and mix well. Add flour and stir until mixture is smooth. For best results, put the batter in the fridge for 30 minutes prior to cooking.

Spray pan with nonstick cooking spray and cook on medium high heat, about 30-90 per side. This recipe makes about 10-15 medium sized crepes. (The nutritional info listed is for 10.) Fill with desired toppings, roll them up, and enjoy! :)
