Introduction

My mom sent me this recipe and I just had to try it. It's great for pot-lucks and as a side dish. Add cooked chicken in the chile layer to make it a meal all it's own! Ingredients

    1 can cream corn
    ¾ c. milk or buttermilk
    ¼ c. oil or melted butter
    2 eggs, slightly beaten
    1 c. yellow cornmeal
    1 t. salt
    1 t. baking soda
    1 lg. can whole green chiles, seeded and washed
    2 c. grated cheese

Directions

Heat oven to 350°
Grease 9 x 13 Pyrex dish
Mix everything in the order given
Pour half of the mix into greased pan
Spread a generous layer of cheese and then a layer of all chiles
Cover with the remaining mixture
Top with a layer of cheese only
Bake for 30-45 min. until golden
Cool slightly, cut into squares, and serve
