Introduction

I got this out of Healthy Cooking. This is a doubled recipe because I have teenage boy. LOL! The original one called for Fettuccine but I had Linguine on hand. Ingredients

    Linguine whole wheat blend Ronzoni, 18 oz
    3.5 cup sliced Baby Bellas
    2 Tbsp Extra Virgin Olive Oil
    2 Garlic cloves minced
    2 15 oz cans of black beans rinsed
    2 14-1/2 oz cans of Diced tomatoes no salt added
    2 tsp dried rosemary, crushed
    1 tsp dried oregano
    Baby spinach (Earthbound farm organic), 142 gram(s)

Directions

1. Cook pasta according to package directions. Meanwhile, in a large skillet, saute mushrooms in oil until tender; add garlic, cook 2 minutes longer.

2. Stir in the black beans, tomatoes, rosemary, oregano. Cook and stir till heated through. Stir in spinach until wilted. Drain pasta. Serve with bean mixture.

Makes 12 servings 2/3 cup of bean mixture over 2/3 cup of pasta
