Introduction

Number of Servings: 4

Ingredients

    2 cans Bumble Bee Prime Fillet Solid White Albacore, drained
    1/2 cup Progresso Italian Style Bread Crumbs
    3 large eggs
    1 T. Bertolli Extra Virgin Olive Oil
    1/2 medium onion, chopped fine
    1 tsp. sea salt
    1/2 tsp. cayenne pepper
    1/2 tsp. black pepper
    1 T. Canola Oil added to black iron skillet to cook them in.

Directions

Drain Albacore tuna and crumble until loose. Add all ingredients and mix well. Shape into 8 patties and cook in 1 T. Canola Oil in preferably a black iron skillet 7 minutes or so on each side, making sure the oil is hot enough to brown them on each side without burning. Cook on medium heat.

    Delicious! However, I did not try Albacore tuna -- just used cheap tuna in water in can. My only problem was that the cholesterol is high in the recipe, so I have to be careful in planning my day nutritionally. - 1/14/11

    Thanks for your comment. You could use just the egg whites and cut it down to just two, to solve the cholesterol issue. The eggs are only there to hold the patties together, so experiment with whites only or fewer eggs. :)
