Introduction

Vegan, wheat free, this banana bread is fluffier and not as sweet as most dessert breads. But with all the spices--and the crunchy slices of almond on the top--it's totally delicious.

Ingredients

    6 tbls water
    2 tbls ground flax meal
    3 medium-sized very ripe bananas, mashed
    1/2 cup applesauce
    1 1/2 tsp vanilla extract
    1/4 cup orange juice
    1/5 cup sugar
    1/5 cup brown sugar
    1 tsp cinnamon
    1 tsp allspice
    1/4 tsp clove
    1/2 tsp salt
    1 tsp baking soda
    1/2 tsp baking powder
    1 1/2 cups spelt flour
    1/2 cup quick or rolled oats
    1/4 cup plus 1/4 cup slivered or chopped raw almonds
    Optional: 1/3 cup raisins or chocolate chips (not included in calorie count)

Directions

Preheat oven to 350.
Lightly spray a bread pan with olive oil, then dust with cinnamon (I think this tastes better than dusting with flour).
Combine the flax and water in a very small saucepan and bring to a boil. Let simmer for 5 minutes. Mixture will turn sticky and goopy--this is our egg replacer! Set aside and let cool.
Meanwhile, in a small bowl mash up the bananas, and mix in applesauce, vanilla, and oj. Stir in flax mixture as well, once cooled down.
In a separate big bowl, mix together the spices, salt, and baking powders. Mix in the flour, oats, and 1/4 cup of the almonds. Add wet ingredients to dry and mix all together.
Pour batter into bread pan and top with remaining almonds.
Bake at 350 for 1 hour.

    how much is a 1/5th of a cup??? I have NEVER seen this before. - 2/17/13
