Introduction

Ingredients

    1 1/2 - 2 lbs leeks
    2 cloves garlic
    2 pats of butter
    1 tsp olive oil
    1/2 t. thyme
    1 cup grated reduced fat cheddar cheese
    1 cup reduced fat milk

Directions

Preheat over to 400. Trim the ends off of the leeks and rinse leaks well. Quarter them lengthwise then roughly chop them. Into a large pan over medium heat, add 2 pats of butter, 1 tsp olive oil and the garlic cloves. As the garlic begins to turn color, add thyme and leeks. Give a stir. Cook for 10 minutes until leeks have softened. Remove the pan from the heat and season with salt and pepper. Stir in 1 cup of low fat milk and half of the grated cheese. Mix and add into a baking dish that will give you about a one inch layer of leeks. Sprinkle the rest of the cheese on top and bake for 20 minutes until gold and bubbly.
