Introduction

A fun experiment to make a healthier alternative to store bought Asian veggie burgers. These could probably be made even healthier by using whole wheat flour instead of white flour, but it's all I had in the house. Ingredients

    3/4 c. Texturized Vegetable Protein (TVP)
    1.5 c. Flour
    2 Eggs
    1/2 bell peppers
    .25 c. scallions
    .5 c. edamame
    1 Tbsp. sesame oil
    2 Tbsp. soy sauce

Directions

Rehydrate TVP in water or broth for 15 mins, drain. Put in large bowl. Mix in veggies. Beat eggs until foamy. Add eggs and wet ingredients to TVP. Stir in flour. Form into 8 2.5" diameter patties. Spray pan lightly with non-stick cooking oil and cook for 3 mins on each side, or until golden brown. Makes 8 2.5" patties.
