Ingredients

    Salad:
    4 C Brussels Sprouts, shaved
    1 C Mushrooms, sliced
    1/4 C Sun Dried Tomatoes, chopped
    1/4 C Walnuts, chopped

    Dressing:
    1 TBSP Extra Virgin Olive Oil
    1/2 TBSP Honey
    1 TSP White Wine Vinegar
    1 TSP Dijon Mustard
    1 TSP Sesame Oil
    Salt & Pepper, to taste

Directions

1. Slice Brussels Sprouts so they are shaved like cole slaw, put in medium bowl
2. Slice Mushrooms and Sun Dried Tomatoes, add to bowl
3. Add Walnuts to bowl
4. In separate dish, mix all ingredients for dressing to fully blend
5. Toss salad with dressing

Note: Can be prepared a day in advance
