Ingredients
-
1 med onion
1/2 cup chopped celery
3 cloves garlic
1 tbsp olive oil
1 lb ground turkey
3 tomatoes, chopped
1 can (15 oz) pinto beans
1/2 cup salsa
spices to taste
Directions
Sweat onions, garlic & celery (and any other veggies) in olive oil.
Add turkey and brown.
Add beans, tomatoes & salsa and simmer until there is no more reserved liquid and season with spices.
Makes 4 servings.
I top mine with a little cheese and fresh tomatoes and eat is as chili, spoon it on top of some tortilla chips, add a sprinkle of cheese and bake it in the over at 400 degrees for 5 minutes for some yummy nachos, or top a multi-grain hamburger bun or english muffin with the mix for a quick sloppy joe recipe.
