Introduction

A vegetarian version of Sloppy Joes A vegetarian version of Sloppy Joes
Number of Servings: 6

Ingredients

    3 Cups of Water
    1 Cup of lentils
    1 yellow pepper
    1 Large onion, chopped
    1 Cup Crushed Tomatoes
    2 Cloves of garlic, minced
    1/2 Cup of Ketchup
    1 t mustard
    1 T chili powder
    2 T molasses
    1 dash worcestershire sauce

Directions

1. Combine water and lentils and bring to a boil, allow to simmer for 30 minutes or until soft.
2. Chop and saute onions and peppers until onions are translucent. And garlic and continue to cook.
3. Mix the rest of the ingredients to form a sauce and combined with the cooked onions. Drain lentils and add to the mixture.
4. Adjust thickness by either cooking longer or adding water.
5. Serve on hamburger buns.
6. Chopped carrots can be added to the mixture. Sometimes I will substitute some of the chili powder with chipolate chili powder which adds a smoky flavor. I have reduced the sugar from the original recipe from 3 T to 2 T so if it isn't sweet enough for you try 3 T. Brown sugar works well if you don't have molasses.

    I am new to the whole vegetarian cuisine (I'm a "flexitarian") and this was really the first strictly vegetarian meal I have prepared that did not involve tofu. It was a little different, but I found it surprisingly delicious, and I will for sure be making it again! Thanks for sharing! - 8/21/11

    Just a reminder that worchestershire sauce that doesn't specify 'vegetarian' on the label probably has anchovy (fish) paste. - 1/15/11
