Introduction
I adapted my favorite zucchini bread recipe, by substituting silken tofu and 0 calorie sweetener in place of eggs and sugar.Also added chocolate chips in place of chopped nuts! Ingredients

1.5 c. all-purpose flour
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. ground cinnamon
1/2 c. silken tofu(cubed)
1/2 c. canola oil
1c. Sweet Additions 0 calorie sweetener (Splenda)
1 1/2 tsp. vanilla extract
1 c. grated zucchini (unpeeled)
2/3 c. milk chocolate chips
Directions
1. Sift together: flour,salt,baking powder, baking soda and cinnamon in a medium sized mixing bowl.
2. In a food processor, process:silken tofu,canola oil,sugar substitute and vanilla
3. Thoroughly stir liquid mixture into the dry mixture, blending well.
4. Stir in the grated zucchini and chocolate chips.
5. Pour into a greased 8"x4" loaf pan.
6. Bake in a preheated 325 degrees F. oven for 40-60 minutes until tester comes out clean.
7.Cool in pan on a rack for 20 minutes before removing from pan and cooling completely.
