Number of Servings: 8

Ingredients

    2 lbs French (or regular) Green Beans
    1/2 C thinly sliced Red Onions
    2 T minced fresh Dill
    1 T Balsamic Vineger
    1 T Red Wine Vinegar
    1 t sugar
    2 T Extra Virgin Olive Oil
    1 1/2 T Dijon Mustard
    1/4 t kosher salt
    1/4 t freshly ground pepper

Directions

Makes 8 Servings

1. Bring a large pot of salted water to a boil (about 2 t salt per quart). Drop in the green beans, bring back to a boil and cook about 2 minutes until crisp-tender. Drain and immerse the beans in a bowl of cold water to stop the cooking process.

2. Toss beans with the onions and dill

3. Whisk together the remaining ingredients and toss with the salad. Bring to room temperature before serving.
