Ingredients

    1/3 cup of walnut oil (can substitute a different oil or 1/3 cup applesauce)
    1/2 cup of pure maple syrup (I used 1 teaspoon of Stevia instead. Nutrition info is for Stevia)
    1 teaspoon vanilla extract
    1 organic egg
    ¾ cup of brown rice flour
    1 teaspoon baking soda
    1/2 cup of carob chips unsweetened
    Dash of all-spice optional

Directions

Grease two baking sheets and preheat oven to 375° F. In a medium size bowl, combine the oil, maple syrup, and vanilla. Beat the egg and stir into the oil mixture. Gradually stir in flour and baking soda to form a stiff batter. Fold in carob chips and drop the batter into the baking sheets by teaspoons. Bake for 10-15 minutes until cookies are lightly brown. Remove from the oven and cool. Serve with almond or rice milk.

    Thank you so much for the wonderful healthy recipe!
    So excited to find a cookie recipe that is ok for phase 3 of the HCG protocol. I did make a few changes...
    I used Applesauce for "oil", 8 drops of liquid Stevia for sweetener, and replaced the flour with Almond Meal. 12 cookies=69.3 Calories each

    These cookies are a great treat when you really want a cookie. I found they are too moist for storage in my cookie jar but I can live with that. I am going to try them using applesauce to cut calories and make them as bar cookies. Should work really well that way. *S*
