Ingredients

Crust:
1.25 cups flour
0.5 tsp salt
0.5 cups lard
1 egg
Pie filling:
3.5 cups cooked sweet potatoes
0.5 cups Splenda
1 teaspoon vanilla extract
2 eggs beaten
0.5 cups skim milk
3 TBSP egg nog mix (or replace the milk & mix with egg nog)
0.25 buttery spread light
Directions
Pie Crust:
Combine 1.25 cups flour, 0.5 cups shortening, and 0.5 tsp salt with a dough cutter until the mixture resembles a coarse meal. Beat the egg in a cup and fill with water to make 1 cup. Mix with the dry ingredients and work dough into a ball. The dough is easiest to work with if it is chilled before it is rolled out. Roll out on a flour covered surface and roll large enough for a large pie pan. Place in pie pan and pinch edges for decorative edging. Cut off excess.
Filling:
Combine 3.5 cups mashed sweet potato, 0.5 cup Splenda, 1 teaspoon vanilla extract, 2 beaten eggs, 0.25 cups melted light buttery spread, and 0.5 cups skim milk and 3 TBSP of egg nog mix. Mix well and place into pie shell.
Sprinkle with nutmeg
Bake at 325 degrees F for 50 minutes.
