My grandmother used to make this soup for her family of eight. The taste can be varied by altering the seasonings to one's own liking. It makes a large amount of soup--good for leftovers. Ingredients

    8 cups water
    4 medium potatoes, cubed
    4 medium carrots, sliced
    1/2 cup rice (brown or white)
    3/4 cup elbow macaroni
    2 cup low sodium tomato juice
    1 15oz. can of dark red kidney beans
    2 TBSP. chili powder
    1 lb. ground beef 85/15
    salt and pepper to tasted

Directions

Bring water to boil--add carrots, potatoes, rice and macaroni. Season to taste. Cook until tender (approx. 25 minutes). Fry hamburger, drain grease and season to taste with pepper or salt. Add tomato juice and hamburger to soup. Simmer briefly. Add kidney beans and chili powder. Simmer briefly. Makes 14 one cup servings.
