Ingredients

    2 Cup Spinach, cooked
    4 Tbsp Low Fat Cream Cheese
    1 Tbsp Butter, unsalted melted
    1/4 Cup Parmesan Cheese
    2 Tbsp Greek Yogurt, nonfat
    2 Tbsp Durkee Fried Onion Rings
    1 Tbsp Onions, chopped fine
    1 Clove Garlic, minced

Directions

Melt Butter medium saucpan. Saute onion and garlic in melted butter. When onions and garlic have sweated, add spinach and cook until heated through. Add cream cheese and cook for a couple minutes until the cream cheese melts, then add the 2 tbsp of Greek Yogurt. Stir to combine. Add Durkee Onion Rings, place cover on pan and let simmer until onion rings are crisp.
Serving = 1/2 cup. Makes 4 servings
