Ingredients

    1 box large/jumbo pasta shells
    3 c low-fat cottage cheese
    2 c Italian Style cheese
    1/2 c Parmesan Cheese
    3 c spaghetti sauce
    1 10 oz package frozen spinach

Directions

Boil shells according to package directions. Drain and rinse in cold water. Thaw spinach by placing in warm water in a sealed plastic bag. While shells are boiling, mix together cottage cheese, Italian-style cheese, parmesan cheese and spinach. After draining shells, stuff a large spoonful of the cheese and spinach mixture into each shell. (I only use about 27 of the shells.) Place shells into a casserole dish, sprayed with cooking spray. Pour spaghetti sauce over the shells, cover with aluminum foil and bake at 350 degrees for 30 minutes.

Makes approx. 9 3-shell servings.

    Cooked this last night for my family. It was very rich and filling. My daughter (who is extremely picky) said she loved it "even though it has spinach" :) Will be making ths one again. - 5/24/11
