I found this out on the internet and made it for some friends who were coming to visit my mom. I have since then passed this recipe on to everybody who eats it. Ingredients

    4 cups cooked chicken chopped
    1/2 cup chopped Celery
    2 tbsp chopped green onion
    4 oz of pineapple chunks
    1 cup grapes
    1/4 cup raisens
    1 apple chopped
    1/4 cup slivered almonds
    1 cup fat free mayo
    1 tbsp dijon mustard
    1/2 tsp curry
    2 tbsp of pineapple juice

Directions

Makes 6 servings

Mix all ingredients and refrigerate for 2 hours or until ready to serve. Serve on bed of baby spinach or lettuce.
