Introduction

I use this to get rid of leftover rice or when I want a change from oatmeal, sometimes for a snack! I use this to get rid of leftover rice or when I want a change from oatmeal, sometimes for a snack!

Ingredients

    1 cup Almond Breeze milk (original flavor)
    1/2 cup liquid egg whites
    1tsp vanilla extract
    1 tbsp ground flax
    1 tbsp brown sugar (not packed)
    1/2 cup leftover cooked rice (i always use a blend of Bhutanese red and jasmine brown rices)
    1/4 cup raisins (packed)

Directions

in a small saucepan, over medium heat, combine almond milk, sugar, flax, egg whites, nutmeg and vanilla extract. Stir well, then add cooked rice. Cook over medium heat,stirring occasionally, until thickened and bubbly. Serve hot. Makes 4, 1/2 cup servings (snack) or 2, 1 cup servings (breakfast)

    Incredible!
    This is a very easy recipe that tastes great. Because I had these ingredients, I replaced the white rice with brown rice, used dried cherries and added cinnamon. I also like my food chunkier so I added 1 cup of rice and it still turned out great. - 3/1/14
