Ingredients

    1 tsp.olive oil
    1 small onion
    1 zucciniand continue with sautesmall zucinni or one cup sliced into cubes
    one half roma tomato, cubed
    one half cup baby spinach
    5 black olives thin sliced
    one tablespoon Italian herb blend
    3 ounces lite mozzarella cheese

Directions

saute onions in olive oil and add zuccinitill lightly cooked and stir in black olives and Italian herbs. Add tomato and spinach and stir till slightly wilted . sprinkle on grated mozzarella and cover pan with glass lid till melted and serve.

    Incredible!
    This was great! I added and substituted what I had on hand. I added yellow squash and some leftover edamame. Then I had to sub capers for olives because unbeknownst to me, my husband had gobbled up the black olives I had set aside! It worked out great. He ate them up! - 9/11/13
