Introduction
This is actually pretty good! My skeptic husband says that it would probably fool some people and that it's pretty good, too! I first tried the recipe from the box of Mori-Nu Tofu, but changed a few items to suit our taste. Please feel free to do the same! This is actually pretty good! Ingredients

1 pkg. Mori-Nu Organic Silken Firm tofu
3 tbsp. Vegenaise
1/4 tsp. honey
1/4 tsp. salt
1/4 tsp. tumeric
1/8 tsp. dry mustard
2 tbsp. minced scallions
2 tbsp. minced celery
freshly-ground black pepper
Directions
Drain the tofu in the colander while preparing the following:
Into a small bowl place the dry ingredients. Add the honey and Vegenaise. Whisk together well. Add the celery and scallions. Pat the tofu dry with a towel and crumble it into the bowl. Stir thoroughly and refrigerate, covered, for at least 30 minutes.
Makes enough for three yummy sandwiches. I like to add big, crisp romaine leaves when I build these.
