Ingredients

4 Tortilla shells
4 slices Turkey Bacon
3/4 C Egg Beaters
2 t Butter
1/8 t Fresh Ground Black Pepper
1/4 t Dry Mustard
4 T Gorgonzola, crumbled or shredded
Directions
- Cook the turkey bacon until it's crispy, then put it on a paper towel to drain the grease off. (save any grease that's in the pan). Add the butter to the pan.
- Mix the egg beaters, pepper and dry mustard, then add them to the pan. Cook on MED-HI.
- When the eggs are about halfway done, crumble the bacon into small pieces, and sprinkle it over the eggs, distributing evenly.
- When the eggs are done, divide into 4 equal parts, and put into tortilla shells. Sprinkle 1 T Gorgonzola into each shell.
- Microwave each shell for 15 seconds to soften before rolling it up.
- Let sit out for 10-15 minutes to cool, then put in a baggie or saran wrap, and freeze.
- To reheat, remove from baggie, wrap in paper towel and microwave for 1:10 on HI.
