Introduction

The best Irish soda bread recipe I have ever had. Of course I could be biased since it is my mother's. The best Irish soda bread recipe I have ever had. Of course I could be biased since it is my mother's.
Number of Servings: 24

Ingredients

    4 cups flour
    1 tsp salt
    4 tsp baking powder
    1/2 tsp baking soda
    3/4 cup sugar
    1/4 cup butter
    1 cup raisins
    1 cup dried cranberries(sweetened)
    2 large eggs
    2 1/4 cups buttermilk

Directions

Preheat oven to 350 degrees.

In a small bowl, lightly beat eggs and buttermilk until mixed.

Combine all ingredients in a large bowl adding the egg and buttermilk mixture last. Stir by hand until the batter is well mixed.

Pour batter into a greased 9" spring-form pan and bake for 1 hour.

This recipe makes 1 loaf which is then divided into 24 slices.

Optional: Soak raisins and cranberries in rum (or water) overnight to have plumper fruit.

    This is DELICIOUS. I like it much better with both the dried cranberries and raisins, than with raisins alone. This is a wonderful splurge for me! - 4/30/10

    I made this for a St. Patricks Day family meal. It wasn't what I expected as it didn't rise very high (I may have done something wrong during preparation) but it sure was tasty and everyone liked it alot. I actually think it will be a better breakfast food. Thanks for sharing. - 3/18/12

    This was the tastiest soda bread I have ever eaten. Mine was ready at 45 minutes! I did not have dried cranberries so I only used raisins and just used the 1 cup. Found the recipe just before I wanted to bake and soaking while prepping worked just fine. Will definitely make again! - 3/13/11
