Introduction

Number of Servings: 4

Ingredients

    2 large red potatoes, quartered with skins on
    1 large yukon potatoe, quartered with skin on
    1/2 head of cauliflower, broken into floorets
    3 carrots, peeled and cut into chunks
    3 medium size garlic cloves, whole with skins removed
    1 green onion, chopped (green and white part)
    1 tablespoon of butter
    4 tablespoons of low fat sour cream
    1 tablespoon of dried basil
    1 tablespoon of Mrs. Dash seasoning, garlic & herb

Directions

Chop potatoes, cauliflower, carrots and put in a pot with the whole peeled garlic cloves. cover with water and boil veggies for 8 to 10 minutes until they are very tender.

Drain all the water out of pot, add butter, low-fat sour cream, basil, seasoning and chopped green onion. Mash everything together with potatoe masher until you have a mashed potatoe texture with some veggie chunks - yum, very good!

Makes approximately 4 1 cup servings.
