Ingredients

    1 10 ounce package of frozen spinach, thawed
    2 fresh hard boiled eggs, one yolk discarded
    2 tablespoons light mayonnaise
    1.5 teaspoons Dijon mustard

Directions

Use freshly made hard boiled eggs. Start making the salad after the eggs have cooled for 5 minutes because that way the yolks blend into the mayonnaise more smoothly.

Remove one yolk and mix well with light mayonnaise and Dijon mustard in a small bowl.

Discard the other egg yolk and chop both egg whites and add to the bowl.

Squeeze the excess moisture out of the thawed frozen spinach. Add in small batches to the bowl and mix well after each addition.

Chill for at least 2 hours so that the flavors can blend. Serve as a side dish.

Makes 4 servings of approximately 1/2 cup each.
