I stumbled into this wonderful spring pizza one evening as I was cleaning out the icebox. Roasted asparagus seems like a weird pizza topping, but the flavors blend in perfectly! Ingredients

    1 lb pizza dough
    1/2 c sundried tomatoes, reconstituted in boiling water for 5 min
    A few tbsp of tomato sauce
    goat cheese
    Parmigiano-Reggiano cheese
    Skim milk/fat free mozzarella cheese
    1 bunch of asparagus spears, snapped at the natural breaking point
    1 onion
    basil or oregano to taste

Directions

Put asparagus and onion on a cookie sheet and spray with nonstick cooking spray. Stick in 400 degree oven to roast while you are preparing the other ingredients.

Roll out pizza dough on your preferred greased pan. I use a half sheet square pan. Lightly sprinkle sauce and spread it thinly across the dough. Spread out sundried tomatoes and a thin bottom layer of mozzarella. Add roasted asparagus and onion and cover with crumbled goat cheese and parmesean. Season to taste and bake until golden brown, around 15-20 minuts.

Tips:
1. Remember to position the pizza ingredients so they are thicker on the outside than the inside.
2. Spread the asparagus out in a striking design to make the pizza look cool.
