Ingredients

    frozen spinach (less than 1 pack)
    skim ricotta (1/3 cup)
    Feta cheese (30 grams)
    2 eggs
    1/2 cup flour
    1/2 cup milk
    .5 tsp baking powder
    .5 tsp salt

Directions

thaw spinach and drain; mix in garlic, feta and riccotta. Mix all other ingredients in a bowl; add spinach mixture. Bake at 350 for about 45min until the middle is set in a smallish caserole (uncovered)

makes 2 dinner size or four snack sized servings
