Delicious and Low Cal! This dish cooks up in a snap (and disappears just as fast) so I like to prep all the veggies the night before and voila, dinner is ready on a busy night!! Ingredients

1/2 TBSP Corn Oil
1/2 TBSP Sesame Oil
2 Boneless skinless chicken breasts, cubed
2 TBSP Corn starch
3 Garlic Cloves, Minced
1/4 Cup Light Soy Sauce
1 TBSP Rice Wine Vinegar
1 Red Bell Pepper, Julienned
2 Carrots, Julienned
1 Zuchinni, Julienned
1/4 Cup Chicken Broth
1 TBSP Light brown sugar, packed
1 Bunch Scallions, cut into 1 inch pieces
Directions
1. Combine the oils and heat to high in a nonstick pan.
2. Coat the chicken in the cornstarch.
3. Add chicken and garlic to pan and cook until chicken is nearly cooked.
4. Add remaining ingredients except scallions.
5. Cover, cook three minutes
6. Add the scallions
7. Cover, cook two more minutes
Spice it up with a little chili oil or hot sauce!
I like to serve this with brown rice, or sometimes fried rice!
