Ingredients

1/2 to 1 cup of uncooked brown rice
2 cans of black beans, drained and rinsed
1 onion
2 cloves of garlic
1/2 Tbsp cumin or to taste
1 tsp Black pepper, to taste
8 oz package mushrooms
2 medium sized peppers (red, yellow or green)
1 14-oz can tomatoes
Directions
Start cooking rice according to instructions.
In a large saucepan, saute the onion in water, broth or oil until soft. Turn down to medium heat and add the black beans. Add garlic, cumin, and black pepper. Add mushrooms, peppers and tomatoes. Cook for ten minutes on medium and then cover and turn to low heat until rice is ready.
You can add the rice to the black beans or serve separately, season with salt and serve on tortillas with whatever condiments make you happy! Or you can eat up the beans and rice, forget the tortilla and condiments and still be happy!
