Ingredients

1 package Near East Roasted Garlic & Olive Oil Couscous (as packaged, with seasoning pack)
1/4 tsp pepper
1/2 tsp salt
1 cup water (or broth)
2 Tbs lemon juice
3 Tbs extra virgin olive oil
1 red pepper, diced
1 med zucchini, sliced and quartered
1 bunch fresh basil leaves, sliced (about 20 leaves)
1/3 cup green onions, sliced
1 package Atheno's Reduced Fat Crumbuled Feta with Basil & Tomato
3-4 fresh garlic cloves, minced
Directions
In medium sauce pan, bring 1 cup water (or broth), seasoning packet from package of couscous, 3-4 fresh minced garlic cloves, 1/2 tsp salt and 1/4 tsp pepper to just a boil.
Stir in couscous, cover. Remove from heat and let stand 5 min.
In large bowl, combine prepared couscous, lemon juice, and olive oil. Mix in diced red pepper, sliced and quartered zucchini, sliced green onions, feta cheese and sliced basil.
Eat right away or chill before serving based on your taste preference.
Makes 6, 1-cup servings.

Fantastic recipe! Thanks for posting. As a note, I used lime juice, substituted zucchini for cucumber, and added 1/2 of a red onion finely diced (which I soaked in the lime juice while I was cutting up my other vegetables) and some chopped sweet orange peppers. Your base recipe is terrific though! - 7/31/17
