Introduction

This is a low-fat version of a baked potato! SO good...one of my favorite recipes!! This is a low-fat version of a baked potato! SO good...one of my favorite recipes!!
Number of Servings: 1

Ingredients

    1 baked potato
    2 TBSP fat free sour cream
    1/4 cup of fresh chopped up broccoli
    1 2% American Cheese singles (you can substitute fat free if you wish)
    Pepper (to taste)

Directions

1. Put potato in microwave for five minutes after puncturing it several times with a fork (you can also bake it in the oven if you prefer)
2. While potato is in the microwave, chop up broccoli
3. Take potato out of the microwave, cut down the middle, and mash up potato
4. Spread butter
5. Cut cheese slice in half for each side of the potato
6. Microwave for 5-10 seconds
7. Spread sour cream
8. Sprinkle broccoli over potato
9. Add pepper, if you like :)

    Very Good
    I made this for lunch today. It's very good! I've never made a potato in the microwave before--it's very convenient. I made couple of changes--substituted in lemon pepper, added garden-fresh chives, and used a pinch of Parmesan instead. Also used fat-free plain yogurt instead of sr crm. Will remake! - 6/28/10
