Ingredients

chicken breast, boneless and skinless trimmed of fat(4)
one packet taco seasoning
water to cover
lettuce
Tomato mixed with cilantro and onion
cheese (mexican mix)
sour cream
homemade quacamole
Salt
Pepper
Lime
Directions
Makes 4 one breast size "tacos"
Place the trimmed chicken breasts in the crock pot on medium if cooking for whole day or high if half day. Pour taco seasoning over breast, cover with water unitl the top of the breasts are the only thing showing. Stir the liquid to break up lumps of seasoning. Cover and walk away. When taco mix is complete, pull apart the breast in the crock pot with two forks (shred). When the breast tears easily it is ready. Dice 3-4 tomatos and mix with 2 tbsp cilantro and onion if desired for a salsa. Open the avacado, remove from skin and mash with a pasted garlic clove and salt and pepper to taste. squeeze a lime on the mixture to slow browning. Place lettuce on plate as a bed. Cover with Chicken, cheese (up to a 1/4 cup), sour cream (up to 2 tbsp), tomato mix (to taste), quac (up to 4 tbsp) and enjoy! Serve with Rice or beans (NOT refried) if desired!
