    2 Cups Onions Diced
    3/4 Cup Corn
    2 Cups Celery Diced
    2 Cloves Garlic Minced
    1 3/4 Cup Fireroasted Tomatoes ( canned )
    2 Cups Black Beans
    2 tsp Olive Oil
    3 Cups Fresh Sweet Potato
    3 Cups Vegetable Stock
    1 Tbsp Cumin seed
    2 tsp Salt
    1 Cup Lentils
    1 tsp Paprika


Step One: Organize all ingredients

Step Two: Wash/prep ingredients

Step Three: Measure ingredients

Step Four: Heat olive oil in pan to sauté until tender onion,
celery, garlic, corn & sprinkle with cumin, salt, & paprika until tender.

Step Five: Add 1 cup of lentils and cook for 20 minutes or until tender. Drain

Step Six: Add tomatoes, black beans, lentils, squash, sweet potato, and vegetable broth, Let combination simmer for 15 minutes.

Step Seven: Server chunky lentil soup over brown rice, and top with a chopped spinach & parmesan cheese.
