Ingredients

1-12oz can of Chick Peas (Garbanzo beans)
1c Chicken Broth
1 small summer squash
1 small green zucchini
2tbsp Chunky Salsa
Salt/Pepper
Cayenne Pepper
Directions
Preparation
Rinse 1 can of Chick Peas
Dice zucchini and summer squash
Cooking
In skillet, heat 2tsp of oil oil on medium heat
Once oil hot, add chick peas until "sizzling"
Add diced zucchini and squash and seasoning appropriate to personal taste (I prefer spicy so I use a lot of peppers) and mix together
Add one cup of chicken broth
Cover skillet and turn heat up to just above medium heat
Let mixture cook for 15 minutes until broth cooks down.
Add 2 tbsp of Chunky Salso (gives an extra layer of flavor and add some color to the mixture)
Let sit covered for another 3 minutes
Garnish and serve with broth
Makes 4-1/2 cup servings
