Ingredients

    1 14. oz can Chickpeas
    1 14. oz can Pinto Beans
    1 14. oz can Kidney Beans
    1 14. oz can Sweet Corn
    3 14. oz can Diced Tomatoes
    1 Green Bell Pepper, diced
    1 Medium Onion,diced
    1 large potato, cooked and cubed
    Morning Star Meal Starters Grillers Crumbles, 2.66 cup
    1 jalepeno (optional), small dice
    1 Tbsp EVOO
    1 tbsp oregano
    1 tbsp cumin
    1 tbsp chili powder
    2 bay leaves
    2 cloves garlic

Directions

Add EVOO to medium heat in large crock pot. Saute garlic and add onion and green pepper, cook for 3 minutes until it starts to soften. Add Morning Star Crumbles, jalepeno if using and spices. Cook additional 2-3 minutes. Meanwhile open beans/corn and rinse in a strainer before adding to pot. Add tomatoes and potatoes, cover pot and let simmer for 30 minutes. Remove bay leaves before eating. Makes approx. 10 - 1 & 1/2 cup servings
