Introduction

Because I made this for just my boyfriend and I, I didn't cook two chickens like they said to! I made the same amount of stuffing as the recipe called for, stuffed two chicken quarters, and then had the rest of the stuffing as leftovers. Ingredients

2 tbsp. butter
2 cups zucchini, shredded
1/2 cup onion, chopped
1 pkg. Stove Top stuffing mix for chicken
1 oz. longhorn colby cheese, shredded
1 oz. mild cheddar cheese, shredded
1 oz. muenster cheese, shredded
1 oz. farmer's cheese, shredded
Directions
Heat oven to 400 degrees F.
Melt butter in medium saucepan on medium heat. Add zucchini and onions. Cook and stir 2 minutes or until tender. Remove from heat. Stir in stuffing mix and cheese until well blended.
Bake 50 minutes (or, if preparing it stuffed in chicken quarters, until chicken is done). Serve and enjoy!
